Organic Wheat Flour

Wheat is the most cultivated commercial food in the world. The oldest evidence of wheat cultivation was found in the Çatalhöyük archaeological site in Anatolia.

  • Production of Flour
  • Organic wheat is produced from a hard grain called durum wheat or Triticum durum, which has a protein content of 13%. While common wheat, or Triticum aestivum, is milled to produce wheat flour, durum wheat is typically milled to produce semolina. As such, durum wheat flour is more difficult to obtain.
  • We offer white flour, brown flour and whole grain flour. Whole grain flour includes all three parts of the wheat grain, namely the germ, which includes healthy fats, the endosperm, which is the starchy part of the grain, and the bran, which is its fiber-filled part. Brown flour has both the germ and bran parts of the grain, while white flour only includes the endosperm.

  • Wheat is an excellent source of many vitamins and minerals, particularly when all parts of the wheat grain, namely the germ, endosperm and bran, are consumed. The wheat endosperm is rich in carbohydrates and protein. The high percentage of protein in organic wheat flour helps to make a consistent dough which promotes a feeling of fullness.
  • Wheat bran is rich in a variety of beneficial compounds such as the B-complex vitamins B1, B2, B3, B5 and B6, in the essential minerals iron, magnesium, zinc and copper, as well as in phytochemicals. Phytochemicals are plant compounds that have been shown to play a role in the prevention of a variety of diseases. Wheat bran contains such phytochemicals as phenolic acids, lignans, and phytosterols, which have antioxidant properties.
  • Wheat germ is the embryo of the wheat grain and it is rich in healthy fats and nutrients such as vitamin E and B-vitamins, including folic acid. Vitamin E promotes a healthy immune system and acts as an antioxidant in the body.
  • It helps to neutralize the free radicals that are released as a result of oxidation which can be damaging to the body’s cells. Folic acid is essential for the production, growth and function of healthy cells. It plays an important role in red blood cell production and is often recommended as a supplement for pregnant women to prevent birth defects.
  • How to Use Wheat Flour
  • Organic wheat flour can be used to make all varieties of dough and breads including pizza dough, rustic bread, flatbread such as pita, hamburger buns, sandwich bread, focaccia, bagels, pretzel rolls, and many others. It can also be used to prepare sweet treats such as cakes, muffins, biscuits, pie crusts, cookies and pancakes.
  • Organic wheat flour can also serve to make pasta and to prepare roux for the thickening of sauces
